In 1996, the Gachupín Velasco family opened their Pre-Hispanic Dining Room called Caldo de Piedra on the main street of their town, Usila. Located in the north of the state on the Usila River, this traditional indigenous community is surrounded by dramatic rocky mountains covered in dense tropical forest. The intention of the family was to teach visitors to Usila about the stone soup dish, a culinary tradition, proudly maintained by the community and an important element of the Chinanteca culture.
The history of the stone broth is remote, it is not known exactly at what time it was discovered. What we do know is that it is a pre-Hispanic dish, a totally indigenous dish, own and creation of the ancient Chinantecos.
