In 1996, the Gachupín Velasco family opened their Pre-Hispanic Dining Room called Caldo de Piedra on the main street of their town, Usila. Located in the north of the state on the Usila River, this traditional indigenous community is surrounded by dramatic rocky mountains covered in dense tropical forest. The intention of the family was to teach visitors to Usila about the stone soup dish, a culinary tradition, proudly maintained by the community and an important element of the Chinese culture.
In 1999, the family presented the traditional Usileño dish to the City of Oaxaca, and the Caldo de Piedra Pre-Hispanic Dining Room was changed to Santa María Coyotepec, a town on the outskirts of the state capital of Oaxaca. With its new location, the Gachupín Velasco family could offer its pre-Hispanic cuisine and excellent service to Oaxacans, national and international tourists. From 2006 to date, the Pre-Hispanic Dining Room is established in a charming palapa located at kilometer 11.9 on the Oaxaca al Tule road, in Tlalixtac de Cabrera (almost in front of the Administrative City)
